Awesome Popsicles To Make This Summer

If you have kids, there is a good chance that you are going to want to have a bunch of easy, cooling snacks on hand this summer in order to reduce your workload. Here are some fun popsicles that you and your kids can make this summer.

1. Smoothie Popsicles

One option is to take your kids' favorite smoothies and pour them into a popsicle mold. These molds can be purchased at a store that specializes in frozen dessert supplies, as well as the sticks that you need to make sure that they are truly portable. Pour the smoothie into the mold so that it is filled halfway. Then, place, a popsicle stick into the smoothie so that it is parallel with the mold. Then, fill the mold the rest of the way up. Place the filled mold in the freezer overnight. These are great for kids who need to go to soccer practice or summer camp because they have all of the nutrients of a healthy breakfast with all of the portability of a popsicle.

2. Chocolate Chia Seed Pudding Popsicles

Another option is to make chia seed pudding popsicles. To make these, take a third of a cup of chia seeds and place them into a bowl. Add a cup and a half of coconut milk or almond milk. Mix in a tablespoon and a half of unsweetened cacao powder, as well as a teaspoon of vanilla. Add honey, sugar, or natural sweetener to taste. Blend the mixture together so that the chia seeds are broken up and the entire mixture has a smooth texture. Chia seeds, when exposed to liquid, will form a gelatin-like barrier around them which will help everything stick together. Place the pudding in the refrigerator for an hour. Then, pour the mixture into the popsicle mold so that it is filled halfway, add a popsicle stick, and then fill the mold the rest of the way. Leave the mold in the freezer until the popsicle has totally hardened. This is a great recipe because it has a lot of fiber in it, which will help with your kids' digestion. It's also healthier than normal chocolate popsicles.

3. Watermelon Popsicles

Finally, if you have too much watermelon for anyone to eat in the next few days, consider sticking a popsicle stick in a watermelon slice and sticking it in the freezer. This will keep the watermelon fresh and portable so that it can be eaten later.
